ALING AURINGS ANNATTO SEEDS (ACHUETE) 1.OZ
Annatto is widely used in the Philippines. The colour is leeched from the seeds by cooking them in oil or fat, the seeds discarded and the oil used to cook food and give it a bright orange-yellow colour. Perhaps the most famous Filipino dish which counts annatto as an essential ingredient is Beef Stew (Kari-kari). In the recipe below annatto is used to colour what would otherwise be a somewhat pallid dish.
