Pork Dumplings

This is a simple pork dumpling recipe where we'll make the wrapper, the filling, and the spices from scratch.  You'll need a steamer for this one.  It  makes about five dozen so call your friends and invite them over to eat!

  • 1 cup all purpose flour

  • 1 egg white

  • 4 tablespoons lard

  • 3 tablespoons water

  1. In a large bowl, pour the flour creating an open space in the middle.

  2. Place the egg white, lard and white into the center and mix there.  Then mix and fold the dough over.  Knead everything together very well.

  3. Roll out dough and cut out circles, 4 inches in diameter.

  1. In a large bowl, combine all ingredients, mix for four minutes, then seal or plastic wrap the cover of the bowl, and store in your refrigerator overnight.  This way the flavors will mingle overnight.

  2. Place one tablespoon of filling at the center of each wrapper.  Press down the filling with the back of a spoon.

  3. Fold up the sides of the wrapper, leaving a little opening at the center.

  4. Arrange on the plate of your greased steamer.  Do not overcrowd your steamer.

  5. Steam for 15 minutes over medium heat.  8 minutes over high heat.

  6. Garnish with shredded carrot and cilantro.

  7. Serve with calamansi and chili-garlic sauce.

Five Spice Powder

  • 1 teaspoon ground pepper

  • 1 teaspoon ground star anise

  • 1 1/4 teaspoon ground fennel seeds

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground white pepper

  1. Combine all of these ingredients in your favorite bowl.  Store in an air tight container.  Use as much you like.

We really like these dumplings, and we hope you do too.  If you ever loose faith, take a breath and start again.  See you tomorrow.
