This dish explains itself. Instead of cheese or bacon filing the middle, this omelet is filled with crab.
1 teaspoon fish sauce
1/4 teaspoon black pepper
2 spring onions, chopped
125g crab meat, fresh, frozen or canned
Oil for frying
1 fresh red chili, sliced, optional
1/2 teaspoon salt
In a medium bowl, beat eggs and slightly season with salt and pepper.
In a frying pan, heat 1 tablespoon of oil and sauté the spring onions and chili for 1 minute. Then add crabmeat, fry for 1 to 2 minutes. Sprinkle patis over meat while frying. Set aside.
Heat another teaspoon of oil in the same pan and pour beaten eggs and cook until set on the bottom and creamy on top. Spoon cooked crab, onions and chili down the center of the omelet. Fold in half. Serve hot.
