Easy Lumpia Recipe

Ingredients:

  • 1 stem leeks, chopped (or one medium-sized red onion)
  • 4 cloves garlic, chopped
  • 1 ¼ cups carrots, chopped
  • 2 lbs. ground beef
  • 2 tablespoons cooking oil
  • Dark soy sauce or salt to taste

Directions:

  1. Heat cooking oil in a skillet. Add garlic and leeks and cook for around 2 minutes. Add carrots and cook for 2 more minutes.
  2. Add ground beef and cook until the beef is no longer red or the meat is cooked through. Remove and drain the excess oil. Season with soy sauce or salt and pepper. Let cool.

Assembling the lumpia:

  1. Prepare a bowl of water to use as a sealant. Carefully separate the lumpia wrapper and place them one at a time on a flat surface or on a large plate. Place a heaping 2-3 tablespoons of the filling diagonally near one corner of the wrapper; leave a 1 ½-inch space on each corner. Fold the bottom and top edges of the wrapper toward the center. Moisten the last edge with the water to seal. Repeat using the rest of the wrappers. You can cook the lumpia immediately or freeze them.
