Filipino Embutido Recipe

Embutido is a Filipino style meatloaf made of pork and sausage. It can be enjoyed as a cold cut or deep-fried. This is a favorite party dish and since it’s a pretty straightforward recipe, everyone can enjoy it. For this recipe, you may use a steamer or the oven.


  • slice (wedges) of hard-cooked eggs
  • 1 tablespoon cornstarch
  • salt and pepper to taste
  • dash of liquid seasoning
  • 1/3 cup sweet pickle relish
  • 1/4 cup raisins
  • 3 whole eggs
  • 1/2 cup grated cheddar cheese
  • 3 tablespoon minced red bell pepper
  • 1 pound ground pork
  • 1/2 cup finely chopped carrots
  • 1 cup (6 slices) finely chopped (sweet or cooked) ham
  • slices (wedges) of Vienna sausage
  • 3 tablespoon minced green bell pepper

Cooking Directions

  1. This meatloaf is steamed, and you may do this two ways. If you have a large steamer, prepare that and cook the meatloaf there. If you don’t, you can steam in the oven with a baking pan and a wire rack. If you are steaming in the oven, preheat the oven to 350˚F.
  2. In a large bowl, combine everything except the wedges of hard-cooked eggs and your sausage. (We’ll roll these in later.) After mixing a meat dough will form. Then separate into 2 to 4 portions, these will be rolled into loaves. Place each section on individual pieces of foil and spread them out flat. Then place the hard-cooked eggs and sausage in the center of each flatten piece.
  3. Holding both ends of your aluminum, roll the “dough” back and forth until it covers the eggs and sausages. Then keep rolling the foil to form a tight log about 1” to 2” in diameter, with the eggs and sausage in the middle, and seal both ends--like a burrito. Repeat with each section.
  4. Place into your steamer and cook for one hour.
  5. If using your oven, pour some water into your baking pan, set your wire rack on top of your baking pan and place your loaves on top then cover everything with aluminum so the steam does not escape. Cook in oven for one hour.
  6. To serve, slice into rings and serve with your favorite sauce or banana catsup.
