Gulaman Sago is a popular Filipino refreshment served in restaurants, street stands as a quick snack or after dinner treat.
3 cups sugar
3 cups water
cooked gulaman, cubed
In a large saucepan, boil water and add uncooked sago. Stir to prevent sticking, cook until transparent. Drain, rinse and set to the side.
In the same sauce pan, pour in sugar and let cook. Add a little water and stir with a wooden spoon, scraping the sides of the pan. Let mixture reach a boil and let cook this way until mixture browns. Let cool, you may want to place pan on top of ice to help it cool immediately. Add this arnibal (syrup) to the sago.
In a glass, add in sweetened sago with arnibal and gulaman. Fill with ice or ice water. Drink immediately.
