Filipino Macaroni Salad Recipe

This delicious lunch time snack is prepared with chicken and pineapple. Serves 4 to 6.


  • 1 box macaroni noodles
  • 2-3 large chicken breasts
  • mayonnaise
  • 1 can pineapple chunks, drained
  • 1 onion, chopped finely
  • ½ cup sweet pickle relish
  • 1 cup shredded cheddar cheese
  • ½ cup raisins
  • 2 to 3 medium carrots, peeled
  • salt, to taste
  • pepper, to taste

Cooking Directions

  1. In a large pot, boil the chicken by immersing the breasts in water and letting it simmer until chicken is tender. Drain and strip.
  2. In a small pot, boil carrots until cooked, about 15 to 20 minutes.
  3. In your large pot, cook macaroni noodles al dente. Drain and cool.
  4. In a large bowl, combine everything and mix. Salt and pepper to taste. Refrigerate and serve cool.
