Maja blanca mais is a coconut cake cooked with corn over a stovetop and thickened with cornstarch. One of the easiest recipes on this website and one of the most delicious. Prepare to eat dessert. Serves 4 to 6
1 can coconut milk
1 1/2 cups water
1/4 cup sugar
3/4 cup yellow cornmeal
2 tbsp glutinous rice flour
1/2 tsp salt
dash of freshly ground black pepper
1/2 cup corn kernels
1/2 cup sour cream
In a large pot, combine coconut milk, water, sugar, cornmeal, rice flour, salt, pepper and corn kernels over low-medium heat. Let simmer for 10-15 minutes, stirring frequently to prevent burning.
Remove from heat and stir in sour cream. Serve hot.
