Filipino Maja Blanca Mais Recipe

Maja blanca mais is a coconut cake cooked with corn over a stovetop and thickened with cornstarch. One of the easiest recipes on this website and one of the most delicious. Prepare to eat dessert. Serves 4 to 6


  • 1 can coconut milk
  • 1 1/2 cups water
  • 1/4 cup sugar
  • 3/4 cup yellow cornmeal
  • 2 tbsp glutinous rice flour
  • 1/2 tsp salt
  • dash of freshly ground black pepper
  • 1/2 cup corn kernels
  • 1/2 cup sour cream

Cooking Directions

  1. In a large pot, combine coconut milk, water, sugar, cornmeal, rice flour, salt, pepper and corn kernels over low-medium heat. Let simmer for 10-15 minutes, stirring frequently to prevent burning.
  2. Remove from heat and stir in sour cream. Serve hot.
