Think of this as Filipino spaghetti. Except these noodles are rice, the sauce seafood and plenty of other unique ingredients which make this an exceptional dish. Serves 4 to 6.
1 package Palabok Sauce Mix
3 cloves garlic, minced
1 package Lug Lug Noodles
Hard boiled egg sliced
2 stalks of green onions, sliced
1 pound shrimp or frozen seafood mix
Ground pork rinds (chicharron) for topping
In a saucepan, cook the noodles as directed. Set aside.
In a skillet or wok, heat oil and cook garlic and onions. Add seafood and cook thoroughly. Add sauce mix and water (as directed on sauce package) let skillet come to a boil and add noodles. Let simmer until ready.
Separate onto individual plates for serving and add scallions, chicharron and slices of egg. For a kick, squeeze lemon on top. Enjoy.
