The Spaniards introduced Afritada to the Philippines. Afritada can be cooked many ways. Here we’ll use pork. Serves 4 to 6.
1/8 tablespoon of pepper
1 pound of pork, cut into serving pieces
1 tablespoon of salt
In a large bowl, season pork with salt and pepper and let marinate for 10-20 minutes.
In a skillet or wok, heat oil. Add pork and stir-fry until lightly brown, no pink. Then add your garlic and sauté. You’ll smell the garlic. Then stir in your onions until soft and translucent. Season with patis then add potatoes. Stir-fry for a few minutes this way.
Now pour in your water and tomato sauce and bring everything to a boil. Then lower to a simmer for 25-30 minutes. Pork should be cooked and the potatoes tender. If not, cook more. Add in bell peppers and stir to blend. Thicken sauce with breadcrumbs, stir and blend. Season a bit. Let simmer for a bit more. Serve hot.
