Filipino Pork Tausi Recipe

Tausi means black beans and this meal is a delight in both texture and flavor. This recipe is also called Humba. Serves 4 to 6


  • 1 kilo ham, cut into pieces
  • 4 cloves garlic, minced
  • 1 cup water
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • ½ cup vinegar
  • ¼ cup soy sauce
  • 1 sprig oregano
  • 1 bay leaf
  • 1 teaspoon peppercorn
  • 3 tablespoons salted black beans
  • ½ cup of banana blossoms (optional)

Cooking Directions

  1. In a skillet or wok, sear the pork chops with sugar until the sugar has caramelized with the pork. Add black beans, garlic and mix well. Add the rest of the ingredients; feel free to add more water if necessary to cook pork through. Add banana blossoms halfway through cooking. Arrange on a platter and serve hot.
