Filipino Puto Bumbong Recipe

Puto Bumbong is a Puto dish made with Pirurutong soaked in bamboo tubes. All Puto dishes are small cakes made of glutinous rice and Pirurutong is a purple-brown rice. This is a festive treat for Christmas or events. There are no exact ingredients, this is a pretty malleable recipe. Enjoy. Serves 4 to 6.


  • 35 oz. malagkit (glutinous) rice
  • 4.4 oz. ordinary rice
  • coconut, shredded
  • butter
  • violet food coloring
  • bumbong (bamboo shoots)
  • water
  • salt
  • sugar

Cooking Directions

  1. In a medium bowl, mix the glutinous and ordinary rice together and soak for one hour in salt water with food coloring. Put mixture inside flour sack towel and let dry overnight. Place something on top to squeeze out the water.
  2. The next morning, heat steamer with water. Put a small amount of rice mixture inside bumbong (bamboo tubes). Attach bumbong to steamer. When steam starts to come out of the bumbong, push puto within. Top with coconut and sugar before serving.
